Description

A festive Christmas cake decorated to resemble Santa Claus, perfect for holiday gatherings.


Ingredients

  • For the cake:
  • 2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • For the frosting:
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • For decoration:
  • Red and white icing or fondant for Santa's suit

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch cake pans.
  2. In a large bowl, stir together flour, sugar, cocoa, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla; beat on medium speed for 2 minutes.
  4. Stir in boiling water (batter will be thin). Pour evenly into prepared pans.
  5. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool for 10 minutes, then remove from pans and cool completely.
  7. For frosting: Beat butter until creamy. Gradually add powdered sugar and cocoa, alternating with cream and vanilla.
  8. Frost the cake layers and decorate with red and white icing to resemble Santa.

Notes

This cake is best served chilled. Store in refrigerator for up to 3 days.
