Gooey, decadent, and absolutely unforgettable chocolate cookies stuffed with salted caramel.
Ingredients

- 2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 24 caramel candies
- Sea salt for sprinkling
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- Gradually add the dry ingredients to the wet ingredients and mix until combined.
- Scoop dough into balls, press a caramel candy into the center of each, and seal the dough around it.
- Place on prepared baking sheets, sprinkle with sea salt, and bake for 10-12 minutes.
- Allow cookies to cool on the sheets for 5 minutes before transferring to a wire rack.
Notes
For extra gooeyness, underbake slightly. Store in an airtight container for up to 3 days.
