Description

A hearty soup featuring rotisserie chicken and fresh mushrooms for a comforting meal.


Ingredients

  • 1 whole rotisserie chicken, shredded
  • 2 cups sliced mushrooms
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion and minced garlic, sauté until softened.
  3. Add sliced mushrooms and cook until they release their juices.
  4. Stir in the shredded rotisserie chicken and chicken broth, bring to a simmer.
  5. Pour in heavy cream and season with salt and pepper.
  6. Simmer for 15-20 minutes, then serve hot.

Notes

Use leftover rotisserie chicken for quick preparation. Adjust seasoning as needed.
