- 1 whole rotisserie chicken, shredded
- 2 cups sliced mushrooms
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onion and minced garlic, sauté until softened.
- Add sliced mushrooms and cook until they release their juices.
- Stir in the shredded rotisserie chicken and chicken broth, bring to a simmer.
- Pour in heavy cream and season with salt and pepper.
- Simmer for 15-20 minutes, then serve hot.
