- 4 medium carrots, sliced into 1-inch pieces
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Optional: 1 teaspoon fresh thyme
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the cubed sweet potatoes and sliced carrots with olive oil, salt, pepper, and thyme if using.
- Spread the vegetables evenly on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through, until tender and caramelized.
Notes
For a sweeter version, drizzle with honey before roasting.
