Description

These Roasted Sweet Potato Rounds are topped with creamy goat cheese and tart cranberries for a perfect holiday side dish. They’re easy to make and full of flavor.


Ingredients

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces goat cheese, crumbled
  • 1/2 cup dried cranberries
  • 2 tablespoons honey
  • 1/4 cup chopped pecans (optional)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the sweet potato rounds with olive oil, salt, and pepper until evenly coated.
  3. Arrange the sweet potatoes in a single layer on the prepared baking sheet. Roast for 20-25 minutes, flipping halfway through, until tender and lightly browned.
  4. Remove from the oven and top each round with goat cheese, cranberries, a drizzle of honey, and pecans if using.
  5. Return to the oven for 5 minutes, or until the cheese is slightly melted.
  6. Serve warm.

Notes

For extra flavor, sprinkle with a pinch of cinnamon before roasting. Store leftovers in an airtight container in the refrigerator for up to 3 days.
