These Roasted Sweet Potato Rounds are topped with creamy goat cheese and tart cranberries for a perfect holiday side dish. They’re easy to make and full of flavor.

- 2 large sweet potatoes, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces goat cheese, crumbled
- 1/2 cup dried cranberries
- 2 tablespoons honey
- 1/4 cup chopped pecans (optional)
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the sweet potato rounds with olive oil, salt, and pepper until evenly coated.
- Arrange the sweet potatoes in a single layer on the prepared baking sheet. Roast for 20-25 minutes, flipping halfway through, until tender and lightly browned.
- Remove from the oven and top each round with goat cheese, cranberries, a drizzle of honey, and pecans if using.
- Return to the oven for 5 minutes, or until the cheese is slightly melted.
- Serve warm.
Notes
For extra flavor, sprinkle with a pinch of cinnamon before roasting. Store leftovers in an airtight container in the refrigerator for up to 3 days.
