Description

Roasted carrots served with creamy whipped ricotta and a drizzle of hot honey for a flavorful side dish.


Ingredients

  • 1 pound carrots, peeled and trimmed
  • 1 cup ricotta cheese
  • 2 tablespoons hot honey
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish

Instructions

  1. Preheat the oven to 400°F.
  2. Toss the carrots with olive oil, salt, and pepper.
  3. Roast the carrots in the oven for 20-25 minutes until tender.
  4. Whip the ricotta cheese until smooth.
  5. Spread the whipped ricotta on a plate, top with roasted carrots, and drizzle with hot honey.
  6. Garnish with fresh herbs and serve.

Notes

For a spicier version, add more hot honey or chili flakes.
