Instructions
- Preheat the oven to 400°F.
- Toss the carrots with olive oil, salt, and pepper.
- Roast the carrots in the oven for 20-25 minutes until tender.
- Whip the ricotta cheese until smooth.
- Spread the whipped ricotta on a plate, top with roasted carrots, and drizzle with hot honey.
- Garnish with fresh herbs and serve.
Notes
For a spicier version, add more hot honey or chili flakes.
