Description

Roasted carrots are tossed with olive oil and seasonings, served over whipped ricotta cheese, and drizzled with hot honey for a sweet and spicy flavor.


Ingredients

  • 1 pound carrots, peeled and trimmed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 2 tablespoons honey
  • 1 teaspoon red pepper flakes
  • Fresh herbs for garnish

Instructions

  1. Preheat the oven to 425°F.
  2. Toss the carrots with olive oil, salt, and pepper on a baking sheet.
  3. Roast in the oven for 20-25 minutes, until tender and caramelized.
  4. In a bowl, whip the ricotta cheese until smooth.
  5. In a small saucepan, heat honey and red pepper flakes over low heat for 5 minutes.
  6. Spread the whipped ricotta on a plate, top with roasted carrots, and drizzle with hot honey.
  7. Garnish with fresh herbs and serve immediately.

Notes

For a milder version, reduce the amount of red pepper flakes in the honey.
