- 4 mint leaves, for garnish
Instructions
1. Prepare the Crust:
- In a small bowl, combine the diced strawberries, 1 tablespoon of erythritol, and lemon juice. Stir to combine and set aside to macerate for about 5 minutes.
- In a mixing bowl, whip the heavy cream with vanilla extract and 1 tablespoon of powdered erythritol until soft peaks form. Be careful not to overwhip.
- Divide the macerated strawberries evenly into four serving cups or small dessert bowls.
- Top each with a generous dollop of the whipped cream mixture.

Notes
