- 1 medium pumpkin, peeled and cubed
- 250g ricotta cheese
- 2 large onions, sliced
- 4 strips of bacon, chopped
- 10 fresh sage leaves
- 2 tablespoons olive oil
- 1 pre-made tart crust
- Salt and pepper to taste
- 1 egg for egg wash
Instructions
- Preheat the oven to 200°C (400°F).
- In a pan, heat olive oil over medium heat and caramelize the onions for 15-20 minutes until golden brown.
- In a separate pan, cook the bacon until crispy, then set aside.
- Roast the pumpkin cubes in the oven for 15 minutes until tender.
- In a bowl, mix ricotta, roasted pumpkin, caramelized onions, bacon, and chopped sage. Season with salt and pepper.
- Pour the mixture into the tart crust and brush the edges with egg wash.
- Bake in the preheated oven for 25-30 minutes until the tart is golden and set.
- Allow to cool slightly before serving.
Notes
For a vegetarian version, omit the bacon and add more vegetables. Pair with a fresh salad.
