Description

A savory tart featuring roasted pumpkin, creamy ricotta, sweet caramelized onions, crispy bacon, and fresh sage, perfect for a fall meal.


Ingredients

  • 1 medium pumpkin, peeled and cubed
  • 250g ricotta cheese
  • 2 large onions, sliced
  • 4 strips of bacon, chopped
  • 10 fresh sage leaves
  • 2 tablespoons olive oil
  • 1 pre-made tart crust
  • Salt and pepper to taste
  • 1 egg for egg wash

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a pan, heat olive oil over medium heat and caramelize the onions for 15-20 minutes until golden brown.
  3. In a separate pan, cook the bacon until crispy, then set aside.
  4. Roast the pumpkin cubes in the oven for 15 minutes until tender.
  5. In a bowl, mix ricotta, roasted pumpkin, caramelized onions, bacon, and chopped sage. Season with salt and pepper.
  6. Pour the mixture into the tart crust and brush the edges with egg wash.
  7. Bake in the preheated oven for 25-30 minutes until the tart is golden and set.
  8. Allow to cool slightly before serving.

Notes

For a vegetarian version, omit the bacon and add more vegetables. Pair with a fresh salad.
