Moist pumpkin bars topped with a rich cream cheese frosting, perfect for fall gatherings.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 cup vegetable oil
  • 1 can (15 ounces) pumpkin puree
  • 4 large eggs
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • For frosting: 1 package (8 ounces) cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a large bowl, mix together flour, sugar, oil, pumpkin puree, eggs, baking powder, cinnamon, baking soda, and salt until well combined.
  3. Pour the batter into the prepared pan and spread evenly.
  4. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely.
  5. For the frosting: In a medium bowl, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until creamy.
  6. Spread the frosting over the cooled bars and cut into squares.

Notes

These bars can be stored in an airtight container in the refrigerator for up to 5 days. For a healthier option, substitute half the oil with applesauce.
