Moist pumpkin bars topped with a rich cream cheese frosting, perfect for fall gatherings.

- 2 cups all-purpose flour
 - 1 1/2 cups granulated sugar
 - 1 cup vegetable oil
 - 1 can (15 ounces) pumpkin puree
 - 4 large eggs
 - 2 teaspoons baking powder
 - 2 teaspoons ground cinnamon
 - 1 teaspoon baking soda
 - 1/2 teaspoon salt
 - For frosting: 1 package (8 ounces) cream cheese, softened
 - 1/4 cup butter, softened
 - 2 cups powdered sugar
 - 1 teaspoon vanilla extract
 
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
 - In a large bowl, mix together flour, sugar, oil, pumpkin puree, eggs, baking powder, cinnamon, baking soda, and salt until well combined.
 - Pour the batter into the prepared pan and spread evenly.
 - Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely.
 - For the frosting: In a medium bowl, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until creamy.
 - Spread the frosting over the cooled bars and cut into squares.
 
Notes
These bars can be stored in an airtight container in the refrigerator for up to 5 days. For a healthier option, substitute half the oil with applesauce.
