For the Pork Chops & Potatoes:
- 4 boneless pork chops (or bone-in if preferred)
- 4 medium potatoes, peeled and thinly sliced
- 1 tbsp olive oil
- Salt and pepper, to taste
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1 tsp dried thyme or Italian seasoning
For the Creamy Sauce:
- 1 (10.5 oz) can cream of mushroom soup
- 1/2 cup sour cream
- 1/2 cup chicken broth
- 1/2 cup shredded cheddar cheese
- 1 tbsp Dijon mustard (optional for extra flavor)
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp black pepper
For Topping:
- 1/4 cup grated Parmesan cheese (optional)
- 1/4 cup chopped fresh parsley (for garnish)
Instructions
1. Preheat & Prepare Baking Dish:
- Preheat your oven to 375°F (190°C).
- Grease or lightly spray a 9×13-inch baking dish with cooking spray.
2. Season & Sear the Pork Chops:
- Season the pork chops with salt, pepper, garlic powder, onion powder, paprika, and dried thyme.
- Heat olive oil in a large skillet over medium-high heat.
- Sear the pork chops for 2-3 minutes per side, until golden brown. Remove from the skillet and set aside (they will finish cooking in the oven).
3. Prepare the Potatoes:
- Layer the sliced potatoes evenly in the bottom of the prepared baking dish.
- Season with salt, pepper, and garlic powder.
4. Make the Creamy Sauce:
- In a medium bowl, combine cream of mushroom soup, sour cream, chicken broth, shredded cheddar cheese, Dijon mustard, garlic powder, onion powder, and black pepper. Stir until smooth and well combined.
5. Assemble the Casserole:
- Pour the creamy sauce over the sliced potatoes in the baking dish. Spread it out evenly.
- Place the seared pork chops on top of the potatoes and sauce.
6. Bake:
- Cover the baking dish with foil and bake for 30 minutes.
- After 30 minutes, remove the foil, sprinkle Parmesan cheese (if using) over the top, and bake uncovered for an additional 10-15 minutes, until the pork chops are cooked through (internal temperature of 145°F) and the potatoes are tender.
7. Serve & Enjoy:
- Let the casserole rest for 5 minutes before serving.
- Garnish with fresh parsley for added flavor and color.
