  • 8 ozwide egg noodles (or preferred pasta)
  • 1medium onion, diced
  • 2garlic cloves, minced
  • 1 ½ cupstomato sauce
  • 1 cupsour cream
  • 1 cupcottage cheese or cream cheese
  • 2 cupsshredded mozzarella or cheddar cheese
  • 1 tspItalian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cook the pasta according to package instructions. Drain and set aside.
  3. In a skillet, brown the ground beef over medium heat. Add the onion and garlic, cooking until fragrant. Stir in tomato sauce, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  4. In a bowl, mix sour cream with cottage cheese or cream cheese until smooth.
  5. Layer the casserole:Spread half the pasta in the baking dish.Top with half the meat sauce, then half the sour cream mixture, and a layer of shredded cheese.Repeat the layers, finishing with cheese on top.

Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 2 months.
Thaw frozen casserole in the refrigerator overnight before reheating in the oven.
