  • 1/2 cup shelled pistachios, finely chopped
  • 1/4 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (panko for extra crunch)
  • Vegetable oil, for frying

Instructions

  1. Prep the brie: Cut the brie into uniform cubes and place on a parchment-lined baking sheet. Freeze for 15 minutes to firm up.
  2. Set up the breading station: In three shallow bowls, place the flour in one, beaten eggs in the second, and a mixture of chopped pistachios and breadcrumbs in the third.
  3. Bread the brie: Dredge each brie cube in flour, shake off excess, dip in egg, then roll in the pistachio-breadcrumb mixture, pressing gently to adhere.
  4. Fry the bites: Heat about 1 inch of oil in a deep skillet to 350°F. Fry the brie bites in batches, about 1-2 minutes per side, until golden brown. Drain on paper towels.
