Pineapple Mango Salsa

For the Crust:

  • For the salsa:
  • 1 cup fresh pineapple, diced
  • 1 ripe mango, peeled and diced
  • 1/2 red bell pepper, finely diced
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • For the dressing:
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

1. Prepare the Crust:

  1. 1. In a large bowl, combine pineapple, mango, red bell pepper, red onion, jalapeño, and cilantro.
  2. 2. In a small bowl, whisk together lime juice, honey, salt, and black pepper.
  3. 3. Pour the dressing over the fruit mixture and gently toss to combine.
  4. 4. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  5. 5. Serve chilled with tortilla chips, over grilled chicken, or as a topping for fish tacos.

Notes

For a spicier salsa, leave the seeds in the jalapeño. Dice ingredients uniformly for best texture. Store leftovers in an airtight container for up to 3 days.
