- 1 teaspoonbaking soda
- 1/2 teaspoonsalt
- 1/2 cupunsalted butter, softened
- 1 cupgranulated sugar
- 2large eggs
- 1 teaspoonvanilla extract
- 1 cupcrushed pineapple (with juice)
- 1/2 cupsour cream
- Optional: 1/2 cup chopped walnuts or pecans
Instructions
- Preheat yourovento 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a medium bowl, combine flour, baking soda, and salt.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs, one at a time, then stir in vanilla.
- Gradually mix in dry ingredients and sour cream alternately, until just combined. Fold in crushed pineapple and nuts (if using).
- Pour batter into prepared pan and bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in pan for 10 minutes, then transfer to awire rackto cool completely.
Notes
For a tropical twist, add a cup of shredded coconut to the batter.This bread keeps well at room temperature for up to 3 days or can be frozen for up to 2 months.
