  • 2 cupsall-purpose flour
  • 1 teaspoonbaking soda
  • 1/2 teaspoonsalt
  • 1/2 cupunsalted butter, softened
  • 1 cupgranulated sugar
  • 2large eggs
  • 1 teaspoonvanilla extract
  • 1 cupcrushed pineapple (with juice)
  • 1/2 cupsour cream
  • Optional: 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat yourovento 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, combine flour, baking soda, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs, one at a time, then stir in vanilla.
  4. Gradually mix in dry ingredients and sour cream alternately, until just combined. Fold in crushed pineapple and nuts (if using).
  5. Pour batter into prepared pan and bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let cool in pan for 10 minutes, then transfer to awire rackto cool completely.

Notes

For a tropical twist, add a cup of shredded coconut to the batter.This bread keeps well at room temperature for up to 3 days or can be frozen for up to 2 months.
