Description

A creamy and indulgent casserole featuring hash browns mixed with pimento cheese for an extra cheesy twist.


Ingredients

  • 1 (32-ounce) package frozen hash brown potatoes, thawed
  • 1 (8-ounce) package cream cheese, softened
  • 2 cups shredded sharp Cheddar cheese
  • 1 (4-ounce) jar diced pimentos, drained
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup crushed Ritz crackers for topping
  • 2 tablespoons melted butter for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, combine the thawed hash browns, softened cream cheese, shredded Cheddar cheese, diced pimentos, sour cream, mayonnaise, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Spread the mixture evenly into the prepared baking dish.
  4. In a small bowl, mix the crushed Ritz crackers with melted butter. Sprinkle this mixture over the top of the casserole.
  5. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the casserole is bubbly.
  6. Let it cool for 10 minutes before serving.

Notes

For a spicier version, add diced jalapeños to the mixture. This casserole can be prepared ahead and refrigerated overnight before baking.
