- 1 (32-ounce) package frozen hash brown potatoes, thawed
- 1 (8-ounce) package cream cheese, softened
- 2 cups shredded sharp Cheddar cheese
- 1 (4-ounce) jar diced pimentos, drained
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup crushed Ritz crackers for topping
- 2 tablespoons melted butter for topping
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large bowl, combine the thawed hash browns, softened cream cheese, shredded Cheddar cheese, diced pimentos, sour cream, mayonnaise, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Spread the mixture evenly into the prepared baking dish.
- In a small bowl, mix the crushed Ritz crackers with melted butter. Sprinkle this mixture over the top of the casserole.
- Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the casserole is bubbly.
- Let it cool for 10 minutes before serving.
Notes
For a spicier version, add diced jalapeños to the mixture. This casserole can be prepared ahead and refrigerated overnight before baking.
