For the Crust:

- 1 1/2 cups pecans, finely chopped
- 1 cup graham cracker crumbs
- 1/2 cup packed brown sugar
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon salt
- For binding:
- 1/4 cup maple syrup
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- For coating:
- 1/2 cup powdered sugar
- 1/4 cup finely chopped pecans
Instructions
1. Prepare the Crust:
- 1. In a large bowl, combine the finely chopped pecans, graham cracker crumbs, brown sugar, cinnamon, and salt.
- 2. In a separate small bowl, whisk together the maple syrup, melted butter, and vanilla extract.
- 3. Pour the wet ingredients into the dry ingredients and mix until well combined. The mixture should hold together when pressed.
- 4. Using a tablespoon or small cookie scoop, portion the mixture and roll into 1-inch balls. Place on a parchment-lined tray.
- 5. Chill the balls in the refrigerator for at least 30 minutes to firm up.
- 6. Before serving, roll the balls in powdered sugar and then in the finely chopped pecans for coating.
- 7. Store in an airtight container in the refrigerator for up to 1 week.
Notes
For a variation, you can dip the chilled balls in melted chocolate instead of the powdered sugar and pecan coating. If the mixture is too dry, add a teaspoon more maple syrup. If too wet, add a tablespoon more graham cracker crumbs.
