  • 1 1/2 cups pecans, finely chopped
  • 1 cup graham cracker crumbs
  • 1/2 cup packed brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • For binding:
  • 1/4 cup maple syrup
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • For coating:
  • 1/2 cup powdered sugar
  • 1/4 cup finely chopped pecans

Instructions

1. Prepare the Crust:

  1. 1. In a large bowl, combine the finely chopped pecans, graham cracker crumbs, brown sugar, cinnamon, and salt.
  2. 2. In a separate small bowl, whisk together the maple syrup, melted butter, and vanilla extract.
  3. 3. Pour the wet ingredients into the dry ingredients and mix until well combined. The mixture should hold together when pressed.
  4. 4. Using a tablespoon or small cookie scoop, portion the mixture and roll into 1-inch balls. Place on a parchment-lined tray.
  5. 5. Chill the balls in the refrigerator for at least 30 minutes to firm up.
  6. 6. Before serving, roll the balls in powdered sugar and then in the finely chopped pecans for coating.
  7. 7. Store in an airtight container in the refrigerator for up to 1 week.

Notes

For a variation, you can dip the chilled balls in melted chocolate instead of the powdered sugar and pecan coating. If the mixture is too dry, add a teaspoon more maple syrup. If too wet, add a tablespoon more graham cracker crumbs.
