Description

These Pecan Pie Cookies are a delightful twist on the classic pie, featuring a buttery cookie base with a gooey pecan filling.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chopped pecans
  • 1/2 cup corn syrup
  • For the topping: 1/2 cup brown sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In another bowl, whisk together flour, baking powder, and salt; gradually add to the creamed mixture.
  5. Fold in chopped pecans.
  6. Drop dough by tablespoonfuls onto prepared sheets.
  7. In a small bowl, mix corn syrup and brown sugar for topping; spoon onto each cookie.
  8. Bake for 10-12 minutes or until edges are golden.
  9. Cool on wire racks.
