For the Crust:

- 3 ripe bananas, mashed
- 1/2 cup creamy peanut butter
- 1/4 cup honey or maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups old-fashioned rolled oats
- 1/2 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- For the mix-ins:
- 1/2 cup chocolate chips
- 1/4 cup chopped walnuts (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a large bowl, mash the bananas until smooth. Add peanut butter, honey, egg, and vanilla. Mix well.
- In a separate bowl, whisk together oats, flour, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fold in chocolate chips and walnuts (if using).
- Spread the batter evenly into the prepared pan.
- Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
- Let cool completely in the pan before slicing into bars.
Notes
Store in an airtight container at room temperature for up to 3 days, or freeze for longer storage. For extra gooey bars, underbake slightly by 2-3 minutes.
