- 1 3/4 cups milk (dairy or plant-based)
- 1 tsp vanilla extract
- For topping:
- 1 banana, sliced
- 2 tbsp peanut butter, melted
- 1 tbsp maple syrup (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and grease an 8×8 baking dish.
- In a large bowl, mix dry ingredients: oats, baking powder, cinnamon, and salt.
- In another bowl, whisk mashed bananas, peanut butter, milk, and vanilla until smooth.
- Combine wet and dry ingredients, stirring until fully incorporated.
- Pour mixture into prepared baking dish and arrange banana slices on top.
- Bake for 30-35 minutes until set and golden at edges.
- Drizzle with melted peanut butter and maple syrup before serving.
Notes
Store leftovers refrigerated for up to 5 days. Reheat with a splash of milk to restore creaminess. For extra protein, add 1 scoop of vanilla protein powder to wet ingredients.
