- 1 pound carrots (Fresh, firm carrots are preferred.)
- 2 tablespoons olive oil
- 2 cloves garlic, minced (Fresh garlic will yield better results.)
- 1/4 cup grated Parmesan cheese (You can substitute with any hard cheese if needed.)
- Salt and pepper to taste (Adjust seasoning as per preference.)
- Fresh parsley for garnish (optional) (Use as a garnish when serving.)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the carrots. Cut them into sticks or rounds, keeping them uniform for even cooking.
- In a bowl, toss the carrots with olive oil, minced garlic, salt, and pepper until well coated.
- Spread the carrots in a single layer on a baking sheet.
- Roast in the oven for 20-25 minutes, or until they are tender and slightly caramelized.
- Remove from the oven and sprinkle with grated Parmesan cheese.
- Return to the oven for an additional 5 minutes, until the cheese is melted and bubbly.
- Garnish with fresh parsley if desired and serve warm.
