Ingredients
- 3 tablespoonsunsalted butter(divided)
- 16 ounceslarge shrimp(peeled, deveined, and tails removed)
- 2cloves garlic(minced)
- 2 cupschicken broth(for a deeper flavor, substitute with seafood broth)
- 1 cupmilk(whole milk or plant-based milk like almond for dairy-free options)
- 8 ouncesdry fettuccine noodles(use gluten-free pasta if needed)
- 1 cupgrated Parmesan cheese(ensure it’s freshly grated for best results)
- 1/2 cupheavy cream
- 1/4 teaspoonpepper
- Pinch of nutmeg(optional, but adds a wonderful warmth to the dish)
- Fresh parsley for garnish
Instructions
- Melt2 tablespoons of butterin a sauté pan over medium heat. Once melted, add the shrimp. Cook the shrimp for about1-2 minutes per sideuntil they become opaque. Once cooked, transfer the shrimp to a plate and cover to keep warm.
- Step 2:In the same pan, add the remaining tablespoon of butter along with the minced garlic. Cook the garlic for30 seconds, making sure not to burn it.
- Step 3:Add thechicken broth, milk, andfettuccine noodles. Stir the mixture to separate the noodles. Once it starts to boil, cover the pan and reduce the heat to low. Let the noodles simmer for11 minutes, stirring once halfway through to prevent them from sticking.
- Step 4:Remove the lid and check the liquid level. Most of it should be absorbed by now. Add theheavy cream,Parmesan cheese, pepper, and a pinch ofnutmeg. Stir until the cheese has melted and the sauce becomes creamy.
- Step 5:Finally, return the shrimp to the pan and stir everything together. Remove the pan from heat and let it sit for5 minutesto allow the sauce to thicken slightly. Garnish with freshly chopped parsley before serving.
Notes
Use fresh shrimp.Frozen shrimp work in a pinch, but fresh shrimp will make the dish stand out with flavor.
Don’t overcook the shrimp.Shrimp cook very quickly—overcooking will make them rubbery. Keep a close eye on them!
Stir the pasta midway. This prevents the noodles from sticking and ensures they cook evenly.
Use freshly grated Parmesan.Pre-grated cheese won’t melt as smoothly and can make the sauce grainy.
