- Season chicken breasts with salt and pepper. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add chicken and brown on both sides until golden, about 3-4 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the finely chopped onion and minced garlic. Sauté until the onion is soft and fragrant, around 2-3 minutes.
- Add the cup of long-grain rice to the skillet and toast for 2-3 minutes, stirring frequently until the rice is lightly golden.
- Pour in 2 cups of chicken broth and 1 cup of heavy cream, stirring well to combine. Bring to a simmer, allowing the flavors to meld.
- Return the chicken to the skillet, placing it on top of the rice mixture. Cover the pan tightly and reduce the heat to low. Let it simmer for 20-25 minutes or until the rice is tender and the chicken is fully cooked through.
