For the Crust:

  • 8 oz cream cheese, softened
  • 1/2 tsp peppermint extract
  • 4 cups powdered sugar
  • Food coloring (optional)
  • For coating:
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar

Instructions

1. Prepare the Crust:

  1. 1. In a large bowl, beat cream cheese and peppermint extract until smooth.
  2. 2. Gradually add powdered sugar, 1 cup at a time, mixing well after each addition.
  3. 3. If using food coloring, add a few drops and knead until evenly distributed.
  4. 4. Roll mixture into 1-inch balls and place on parchment paper.
  5. 5. Flatten each ball with a fork or decorative press to create patterns.
  6. 6. Let mints dry uncovered at room temperature for 2 hours.
  7. 7. Combine granulated and powdered sugar for coating in a shallow bowl.
  8. 8. Gently roll each mint in sugar mixture to coat completely.
  9. 9. Store in airtight container in refrigerator for up to 2 weeks.

Notes

For firmer mints, reduce cream cheese to 6 oz. These can be made ahead and frozen (uncoated) for up to 3 months. Thaw before sugar coating.
