For the Crust:

- 8 oz cream cheese, softened
- 1/2 tsp peppermint extract
- 4 cups powdered sugar
- Food coloring (optional)
- For coating:
- 1/2 cup granulated sugar
- 1/4 cup powdered sugar
Instructions
1. Prepare the Crust:
- 1. In a large bowl, beat cream cheese and peppermint extract until smooth.
- 2. Gradually add powdered sugar, 1 cup at a time, mixing well after each addition.
- 3. If using food coloring, add a few drops and knead until evenly distributed.
- 4. Roll mixture into 1-inch balls and place on parchment paper.
- 5. Flatten each ball with a fork or decorative press to create patterns.
- 6. Let mints dry uncovered at room temperature for 2 hours.
- 7. Combine granulated and powdered sugar for coating in a shallow bowl.
- 8. Gently roll each mint in sugar mixture to coat completely.
- 9. Store in airtight container in refrigerator for up to 2 weeks.
Notes
For firmer mints, reduce cream cheese to 6 oz. These can be made ahead and frozen (uncoated) for up to 3 months. Thaw before sugar coating.
