- 1 tbsp lemon juice

- 1 cup whipped cream
- 1/2 cup fresh strawberries, halved
- 1 tbsp graham cracker crumbs (optional)
Instructions
1. Prepare the Crust:
- 1. Prepare the crust: Mix graham cracker crumbs, melted butter, and sugar in a bowl. Press firmly into the bottom of a 9×13-inch dish. Chill for 15 minutes.
- 2. Make the strawberry layer: Combine sliced strawberries, sugar, and lemon juice in a bowl. Let sit for 10 minutes, then mash lightly with a fork.
- 3. Whip the cream cheese: Beat softened cream cheese, powdered sugar, and vanilla until smooth. Gently fold in whipped cream.
- 4. Assemble layers: Spread half the cheesecake mixture over the crust. Top with strawberry mixture, then remaining cheesecake mixture.
- 5. Chill: Refrigerate for at least 4 hours (or overnight). Before serving, top with whipped cream, strawberry halves, and a sprinkle of graham crumbs.
Notes
For a firmer texture, freeze for 1 hour before serving. Substitute raspberries or blueberries for strawberries if preferred. Store leftovers covered in the fridge for up to 3 days.
