For the Crust:
- 4 boneless, skinless chicken breasts
- 2 cups sliced mushrooms
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated parmesan cheese
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then cook until golden brown and cooked through (about 6-7 minutes per side). Remove and set aside.
- In the same skillet, add mushrooms and garlic. Cook until mushrooms are tender and browned (about 5 minutes).
- Reduce heat to medium-low. Stir in heavy cream, thyme, and parmesan cheese. Simmer for 3-4 minutes until sauce thickens slightly.
- Return chicken to the skillet, spooning sauce over the top. Cook for 2 more minutes to heat through before serving.
