A traditional Moroccan dish featuring chicken simmered with olives, preserved lemons, and aromatic spices.
Ingredients

- 1 tablespoon olive oil
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1 (3 pound) chicken, cut into pieces
- 1 cup chicken broth
- 1 cup pitted green olives
- 1 preserved lemon, quartered
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and garlic; cook until softened.
- Stir in spices.
- Add chicken and brown on all sides.
- Pour in chicken broth and bring to a boil.
- Reduce heat, cover, and simmer for 45 minutes.
- Add olives and preserved lemon; cook for another 15 minutes.
