Description

This is a moist and delicious carrot cake made with cream cheese frosting.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 3 eggs
  • 1 cup vegetable oil
  • 1 teaspoon vanilla
  • 2 cups grated carrots
  • 1 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F.
  2. Grease and flour a 9×13 inch pan.
  3. In a large bowl, mix flour, sugar, baking soda, baking powder, and cinnamon.
  4. Add eggs, oil, vanilla, and carrots; mix well.
  5. Fold in walnuts if using.
  6. Pour into pan and bake for 40-50 minutes.

Notes

Let cool completely before frosting.
