Description
This is a moist and delicious carrot cake made with cream cheese frosting.
Ingredients

- 2 cups all-purpose flour
- 2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 3 eggs
- 1 cup vegetable oil
- 1 teaspoon vanilla
- 2 cups grated carrots
- 1 cup chopped walnuts (optional)
Instructions
- Preheat oven to 350°F.
- Grease and flour a 9×13 inch pan.
- In a large bowl, mix flour, sugar, baking soda, baking powder, and cinnamon.
- Add eggs, oil, vanilla, and carrots; mix well.
- Fold in walnuts if using.
- Pour into pan and bake for 40-50 minutes.
