- 6 medium russet potatoes, peeled and cubed
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup bacon bits
- 1/4 cup unsalted butter
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large pot, boil the cubed potatoes in salted water until tender, about 15 minutes. Drain and mash them slightly.
- In a mixing bowl, combine the mashed potatoes with sour cream, shredded cheddar cheese, bacon bits, butter, garlic powder, salt, and pepper.
- Transfer the mixture to a greased baking dish and spread evenly.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
Notes
For a crispier top, broil for the last 2 minutes. This dish can be made ahead and reheated.
