Description

A comforting side dish featuring creamy potatoes baked with cheese and bacon for a rich, indulgent flavor.


Ingredients

  • 6 medium russet potatoes, peeled and cubed
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup bacon bits
  • 1/4 cup unsalted butter
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, boil the cubed potatoes in salted water until tender, about 15 minutes. Drain and mash them slightly.
  3. In a mixing bowl, combine the mashed potatoes with sour cream, shredded cheddar cheese, bacon bits, butter, garlic powder, salt, and pepper.
  4. Transfer the mixture to a greased baking dish and spread evenly.
  5. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.

Notes

For a crispier top, broil for the last 2 minutes. This dish can be made ahead and reheated.
