- 16corn tortillas (6-inch)
- 2 cupsrefried beans, warmed
- 1 teaspoonvegetable oil
- 1pound ground beef
- 1 tablespoontaco seasoning
- 2 cupsenchilada sauce (or taco sauce)
- 8 ouncescheddar cheese, shredded
- Toppings: diced tomatoes, sliced black olives, chopped green onions, hot sauce
Instructions
- Heat vegetable oil in a skillet and fry the tortillas until golden; drain on paper towels.
- In the same skillet, cook ground beef with taco seasoning until browned; drain excess grease.
- Preheatovento 400°F (200°C). Layer eight tortillas on abaking sheet, spread refried beans and ground beef on each, then cover with another tortilla.
- Top with enchilada sauce and shredded cheese, then bake for 10 minutes or until cheese is bubbly.
- Garnish with tomatoes, olives, green onions, and hot sauce.
Notes
