Description

A delicious twist on the classic grilled cheese sandwich featuring fresh spinach, feta cheese, sun-dried tomatoes, and herbs, inspired by Mediterranean flavors.


Ingredients

  • 4 slices crusty bread (such as sourdough or ciabatta)
  • 4 ounces fresh spinach
  • 4 ounces feta cheese, crumbled
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup Kalamata olives, pitted and chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 clove garlic, minced

Instructions

  1. Preheat a skillet over medium heat.
  2. In a bowl, toss spinach with olive oil, minced garlic, salt, and pepper.
  3. Divide feta, sun-dried tomatoes, and olives evenly among the bread slices.
  4. Add the spinach mixture on top, then top with remaining bread slices to form sandwiches.
  5. Grill for 3-4 minutes per side until golden and cheese is melted.

Notes
