- 4 ounces fresh spinach
- 4 ounces feta cheese, crumbled
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup Kalamata olives, pitted and chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 clove garlic, minced
Instructions
- Preheat a skillet over medium heat.
- In a bowl, toss spinach with olive oil, minced garlic, salt, and pepper.
- Divide feta, sun-dried tomatoes, and olives evenly among the bread slices.
- Add the spinach mixture on top, then top with remaining bread slices to form sandwiches.
- Grill for 3-4 minutes per side until golden and cheese is melted.
Notes
