A quick and healthy stir fry featuring ground beef with Mediterranean herbs and vegetables.
Ingredients

- 1 pound ground beef
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and minced garlic; sauté until fragrant, about 2 minutes.
- Add ground beef; cook until browned, breaking it apart with a spoon.
- Stir in bell pepper, zucchini, and cherry tomatoes; cook for 5 minutes.
- Season with oregano, basil, salt, and pepper; stir well.
- Cook for another 5 minutes until vegetables are tender.
- Garnish with fresh parsley and serve hot.
Notes
For a vegetarian version, substitute ground beef with lentils or mushrooms.
