Description

A quick and healthy stir fry featuring ground beef with Mediterranean herbs and vegetables.


Ingredients

  • 1 pound ground beef
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and minced garlic; sauté until fragrant, about 2 minutes.
  3. Add ground beef; cook until browned, breaking it apart with a spoon.
  4. Stir in bell pepper, zucchini, and cherry tomatoes; cook for 5 minutes.
  5. Season with oregano, basil, salt, and pepper; stir well.
  6. Cook for another 5 minutes until vegetables are tender.
  7. Garnish with fresh parsley and serve hot.

Notes

For a vegetarian version, substitute ground beef with lentils or mushrooms.
