For the Crust:
- 8 oz block feta cheese
- 1 pint cherry tomatoes, halved
- 4 large eggs
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- Salt and black pepper to taste
- Fresh basil or parsley for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C).
- In a baking dish, arrange the feta block in the center and surround it with cherry tomatoes.
- Drizzle olive oil over the feta and tomatoes, then sprinkle with oregano, red pepper flakes, salt, and black pepper.
- Bake for 20 minutes until the tomatoes soften and the feta begins to brown.
- Remove from oven and make 4 small wells in the mixture. Crack an egg into each well.
- Return to oven and bake for 8-10 minutes until egg whites are set but yolks are still runny.
- Garnish with fresh herbs and serve warm with crusty bread.
