- 2 cups leftover mashed potatoes
- 1 cup shredded cheddar cheese
- 1 large egg
- 1/2 cup all-purpose flour
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 1/4 cup chopped chives
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the mashed potatoes, shredded cheese, egg, flour, garlic powder, salt, and pepper. Mix until well combined.
- If using, fold in the chopped chives.
- Scoop tablespoon-sized portions of the mixture and roll into balls, then place them on the prepared baking sheet.
- Bake for 20-25 minutes, or until the puffs are golden brown and crispy on the outside.
- Allow to cool for a few minutes before serving.
Notes
These puffs can be made ahead and reheated in the oven for crispiness. Store in an airtight container in the refrigerator for up to 3 days.
