Description

These mashed potato puffs are a delicious way to repurpose leftover mashed potatoes, featuring a cheesy interior and crispy exterior.


Ingredients

  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1 large egg
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 cup chopped chives

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the mashed potatoes, shredded cheese, egg, flour, garlic powder, salt, and pepper. Mix until well combined.
  3. If using, fold in the chopped chives.
  4. Scoop tablespoon-sized portions of the mixture and roll into balls, then place them on the prepared baking sheet.
  5. Bake for 20-25 minutes, or until the puffs are golden brown and crispy on the outside.
  6. Allow to cool for a few minutes before serving.

Notes

These puffs can be made ahead and reheated in the oven for crispiness. Store in an airtight container in the refrigerator for up to 3 days.
