This creamy, flavorful chicken dish is so delicious it might just earn you a marriage proposal! Tender chicken breasts are seared and simmered in a rich, garlicky sun-dried tomato and cream sauce.

  • 4 boneless, skinless chicken breasts
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 2 tbsp olive oil
  • For the Sauce:
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1/4 cup fresh basil, chopped
  • For Garnish:
  • Extra parmesan cheese
  • Fresh basil leaves

Instructions

1. Prepare the Crust:

  1. 1. Season chicken breasts with salt, pepper, and paprika on both sides.
  2. 2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes per side until golden brown. Remove and set aside.
  3. 3. In the same skillet, add garlic and sauté for 30 seconds until fragrant.
  4. 4. Add sun-dried tomatoes, oregano, basil, and red pepper flakes. Cook for 1 minute.
  5. 5. Pour in chicken broth to deglaze the pan, scraping up any browned bits.
  6. 6. Stir in heavy cream and parmesan cheese. Bring to a simmer and cook for 3-4 minutes until slightly thickened.
  7. 7. Return chicken to the skillet and simmer for 5-7 minutes until chicken is cooked through.
  8. 8. Garnish with fresh basil and extra parmesan before serving.

Notes

For a lighter version, substitute half-and-half for heavy cream. Serve over pasta or with crusty bread to soak up the delicious sauce. The sauce thickens as it cools.
