For the Crust:

- 4 boneless, skinless chicken breasts
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 2 tbsp olive oil
- For the Sauce:
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1/4 cup fresh basil, chopped
- For Garnish:
- Extra parmesan cheese
- Fresh basil leaves
Instructions
1. Prepare the Crust:
- 1. Season chicken breasts with salt, pepper, and paprika on both sides.
- 2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes per side until golden brown. Remove and set aside.
- 3. In the same skillet, add garlic and sauté for 30 seconds until fragrant.
- 4. Add sun-dried tomatoes, oregano, basil, and red pepper flakes. Cook for 1 minute.
- 5. Pour in chicken broth to deglaze the pan, scraping up any browned bits.
- 6. Stir in heavy cream and parmesan cheese. Bring to a simmer and cook for 3-4 minutes until slightly thickened.
- 7. Return chicken to the skillet and simmer for 5-7 minutes until chicken is cooked through.
- 8. Garnish with fresh basil and extra parmesan before serving.
Notes
For a lighter version, substitute half-and-half for heavy cream. Serve over pasta or with crusty bread to soak up the delicious sauce. The sauce thickens as it cools.
