- 1/2 cup granulated sugar
- 1/4 cup pure maple syrup
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt

- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup buttermilk
- 1 tsp vanilla extract
- 1 1/2 cups diced apples (about 2 medium apples)
- For the streusel topping:
- 1/4 cup all-purpose flour
- 1/4 cup brown sugar
- 1/4 cup chopped pecans
- 1/2 tsp ground cinnamon
- 2 tbsp cold unsalted butter, cubed
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, mix melted butter, maple syrup, eggs, buttermilk, and vanilla until smooth.
- Pour wet ingredients into dry ingredients and stir until just combined. Fold in diced apples.
- For the streusel: Mix flour, brown sugar, pecans, and cinnamon. Cut in cold butter until crumbly.
- Divide batter evenly among muffin cups. Sprinkle streusel topping generously over each.
- Bake for 18-22 minutes or until a toothpick comes out clean. Cool in pan for 5 minutes, then transfer to a wire rack.
Notes
For best results, use crisp apples like Honeycrisp or Granny Smith. Store in an airtight container for up to 3 days or freeze for longer storage. Warm slightly before serving for extra deliciousness!
