Description

A creamy and hearty soup made with potatoes, bacon, cheese, and other flavorful ingredients.


Ingredients

  • 6 cups peeled and diced potatoes
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 4 cups chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup chopped green onions

Instructions

  1. In a large pot, combine potatoes, onion, celery, carrots, chicken broth, salt, and pepper.
  2. Bring to a boil, then reduce heat and simmer until vegetables are tender, about 15-20 minutes.
  3. Use an immersion blender to puree the soup until smooth, or leave it chunky as desired.
  4. Stir in heavy cream and cheddar cheese until melted and creamy.
  5. Serve hot, topped with crumbled bacon and green onions.

Notes

For a vegetarian version, substitute bacon with mushrooms or omit it. Adjust seasoning to taste.
