- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup shredded cheddar cheese
- 1 cup cooked ground beef
- 1 cup corn kernels
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
- In a large bowl, whisk together cornmeal, flour, baking powder, and salt.
- In another bowl, mix milk, oil, and eggs until well combined.
- Stir the wet ingredients into the dry ingredients until just moistened.
- Fold in cheese, ground beef, corn, onions, and bell peppers.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool for 10 minutes before serving.
Notes
For a spicier version, add jalapeños or hot sauce to the mix. Store leftovers in an airtight container for up to 3 days.
