Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup cooked ground beef
  • 1 cup corn kernels
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together cornmeal, flour, baking powder, and salt.
  3. In another bowl, mix milk, oil, and eggs until well combined.
  4. Stir the wet ingredients into the dry ingredients until just moistened.
  5. Fold in cheese, ground beef, corn, onions, and bell peppers.
  6. Pour the batter into the prepared baking dish and spread evenly.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Let it cool for 10 minutes before serving.

Notes

For a spicier version, add jalapeños or hot sauce to the mix. Store leftovers in an airtight container for up to 3 days.
