A refreshing cheesecake combining the zesty flavors of lemon and lime with cherries and pistachios for a creamy delight.
Ingredients
- Crust: 1 1/2 cups graham cracker crumbs

Instructions
- Preheat the oven to 325°F and grease a 9-inch springform pan.
- For the crust: In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press the mixture into the bottom of the prepared pan.
- Bake the crust for 10 minutes, then let it cool.
- For the filling: In a large bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
- Stir in lemon zest, lime zest, chopped cherries, chopped pistachios, and vanilla extract until evenly distributed.
- Pour the filling over the cooled crust and smooth the top.
- Bake for 45-50 minutes or until the center is set. Turn off the oven and let the cheesecake cool inside for 1 hour.
- Refrigerate for at least 4 hours or overnight before serving.
- Topping: Add whipped cream and garnish with fresh cherries and pistachios before serving.
