Ingredients

- 2 salmon fillets, about 6 oz each
- 1/4 cup fresh basil leaves, chopped
- 1 lemon, zested and juiced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 4 rice paper wrappers
- 1 cucumber, julienned
- 1 carrot, julienned
Instructions
- Prepare the salmon: Season the salmon fillets with salt, pepper, and lemon zest. Heat olive oil in a pan over medium heat and cook the salmon for 4-5 minutes per side until flaky.
- Assemble the rolls: In a bowl, mix the chopped basil with lemon juice. Dip a rice paper wrapper in warm water until soft, then lay it flat. Add a piece of cooked salmon, basil mixture, cucumber, and carrot in the center.
- Roll it up: Fold the sides of the wrapper over the filling and roll tightly. Repeat with remaining wrappers.
- Serve: Slice the rolls in half and serve with a side of soy sauce or a light dipping sauce.
Notes
For a vegan version, substitute salmon with tofu and ensure all ingredients are fresh for the best flavor.
