- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 2 large eggs
- 1 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup fresh lemon juice
- Zest of 1 lemon
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
- In a medium bowl, mix 1 cup flour, 1/2 cup softened butter, and 1/4 cup sugar until crumbly. Press the mixture into the bottom of each muffin cup.
- Bake the crust for 10 minutes, then remove from the oven and let cool slightly.
- In another bowl, whisk together 2 eggs, 1 cup sugar, 2 tablespoons flour, baking powder, salt, lemon juice, and lemon zest until smooth.
- Pour the lemon mixture over the baked crust in the muffin cups.
- Bake for an additional 15-20 minutes or until the tops are set and lightly golden.
- Allow to cool completely in the pan before removing.
Notes
For the best flavor, use freshly squeezed lemon juice. Store in an airtight container for up to 3 days.
