Description

These delightful lemon bar cookie cups combine a buttery crust with a tangy lemon filling, perfect for any gathering.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup fresh lemon juice
  • Zest of 1 lemon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a medium bowl, mix 1 cup flour, 1/2 cup softened butter, and 1/4 cup sugar until crumbly. Press the mixture into the bottom of each muffin cup.
  3. Bake the crust for 10 minutes, then remove from the oven and let cool slightly.
  4. In another bowl, whisk together 2 eggs, 1 cup sugar, 2 tablespoons flour, baking powder, salt, lemon juice, and lemon zest until smooth.
  5. Pour the lemon mixture over the baked crust in the muffin cups.
  6. Bake for an additional 15-20 minutes or until the tops are set and lightly golden.
  7. Allow to cool completely in the pan before removing.

Notes

For the best flavor, use freshly squeezed lemon juice. Store in an airtight container for up to 3 days.
