For the Crust:

  • 3 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup warm pineapple juice
  • 1/4 cup warm milk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/2 teaspoon salt
  • For the filling:
  • 1/2 cup brown sugar
  • 2 tablespoons ground cinnamon
  • 1/4 cup unsalted butter, softened
  • For the glaze:
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. 1. In a large bowl, mix the warm pineapple juice, warm milk, and yeast. Let it sit for 5 minutes until foamy.
  2. 2. Add sugar, melted butter, eggs, and salt to the yeast mixture. Gradually add flour and mix until a dough forms.
  3. 3. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  4. 4. Place the dough in a greased bowl, cover, and let it rise in a warm place for 1-2 hours or until doubled in size.
  5. 5. For the filling, mix brown sugar and cinnamon. Roll out the dough into a rectangle and spread softened butter over it. Sprinkle the cinnamon-sugar mixture evenly on top.
  6. 6. Roll the dough up tightly from the long side and cut into 12 rolls. Place them in a greased baking dish.
  7. 7. Cover and let rise for another 30 minutes. Preheat the oven to 350°F (175°C).
  8. 8. Bake the rolls for 25-30 minutes or until golden brown.
  9. 9. For the glaze, whisk together powdered sugar, milk, and vanilla extract. Drizzle over the warm rolls before serving.

Notes

These cinnamon rolls are best served warm. Store leftovers in an airtight container for up to 3 days.
