For the Crust:
- 1 cup fresh strawberries, hulled and sliced
- 1 cup heavy whipping cream
- 2 tablespoons powdered erythritol
- 1 teaspoon vanilla extract
- 1 tablespoon chia seeds
- Fresh mint leaves, for garnish (optional)
Instructions
1. Prepare the Crust:
- In a medium bowl, combine sliced strawberries with 1 tablespoon of powdered erythritol. Set aside to allow the strawberries to release their natural juices.
- In a separate bowl, whip the heavy cream using an electric mixer on medium-high speed until soft peaks form.
- Add the remaining 1 tablespoon of powdered erythritol and vanilla extract to the whipped cream, and continue to mix until stiff peaks form.
- Gently fold in the chia seeds and half of the sliced strawberries into the whipped cream mixture.
- Divide the mixture evenly into serving cups or bowls.
- Top each serving with the remaining strawberries and garnish with fresh mint leaves if desired.
- Serve immediately or refrigerate for up to 1 hour for a chilled dessert.
Notes
For a dairy-free version, substitute the heavy cream with full-fat coconut cream. Make sure to chill the coconut cream overnight for the best results.
