For the Crust:

  • For the soup base:
  • 1 lb ground beef (80/20)
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1/2 cup heavy cream
  • 4 oz cream cheese, softened
  • For the seasonings:
  • 1 tsp paprika
  • 1 tsp mustard powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • For toppings:
  • 1 cup shredded cheddar cheese
  • 1/4 cup diced pickles
  • 2 tbsp sugar-free ketchup (optional)
  • 2 tbsp cooked bacon bits (optional)

Instructions

1. Prepare the Crust:

  1. 1. In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat if needed.
  2. 2. Add diced onions and minced garlic to the pot. Sauté for 2-3 minutes until onions are translucent.
  3. 3. Pour in beef broth and bring to a simmer. Reduce heat to low.
  4. 4. Add heavy cream, softened cream cheese, and all seasonings (paprika, mustard powder, black pepper, salt). Stir until cream cheese is fully melted and incorporated.
  5. 5. Simmer for 10-15 minutes, stirring occasionally, until slightly thickened.
  6. 6. Ladle into bowls and top with shredded cheddar cheese, diced pickles, and optional bacon bits or sugar-free ketchup.
  7. 7. Serve hot.

Notes

For a thicker soup, simmer longer or add 1/4 cup of almond flour. Store leftovers in the refrigerator for up to 3 days. Reheat gently to prevent separation.
