For the Crust:
- For the soup base:
- 1 lb ground beef (80/20)
- 1/2 cup diced onions
- 2 cloves garlic, minced
- 4 cups beef broth
- 1/2 cup heavy cream
- 4 oz cream cheese, softened
- For the seasonings:
- 1 tsp paprika
- 1 tsp mustard powder
- 1/2 tsp black pepper
- 1/2 tsp salt
- For toppings:
- 1 cup shredded cheddar cheese
- 1/4 cup diced pickles
- 2 tbsp sugar-free ketchup (optional)
- 2 tbsp cooked bacon bits (optional)
Instructions
1. Prepare the Crust:
- 1. In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat if needed.
- 2. Add diced onions and minced garlic to the pot. Sauté for 2-3 minutes until onions are translucent.
- 3. Pour in beef broth and bring to a simmer. Reduce heat to low.
- 4. Add heavy cream, softened cream cheese, and all seasonings (paprika, mustard powder, black pepper, salt). Stir until cream cheese is fully melted and incorporated.
- 5. Simmer for 10-15 minutes, stirring occasionally, until slightly thickened.
- 6. Ladle into bowls and top with shredded cheddar cheese, diced pickles, and optional bacon bits or sugar-free ketchup.
- 7. Serve hot.
Notes
For a thicker soup, simmer longer or add 1/4 cup of almond flour. Store leftovers in the refrigerator for up to 3 days. Reheat gently to prevent separation.
