For the Crust:

  • For the onion rings:
  • 1 large sweet onion (sliced into 1/2-inch rings)
  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • For the wrapping:
  • 12 slices thin-cut bacon
  • 1/4 cup sugar-free barbecue sauce (for glaze)
  • For serving:
  • 1/4 cup ranch dressing (sugar-free)
  • 1 tbsp chopped fresh chives

Instructions

1. Prepare the Crust:

  1. 1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. 2. Separate onion slices into rings and toss with olive oil, smoked paprika, and garlic powder.
  3. 3. Wrap each onion ring with 1 slice of bacon, overlapping slightly. Secure with toothpicks if needed.
  4. 4. Arrange on baking sheet and brush lightly with sugar-free barbecue sauce.
  5. 5. Bake for 20-25 minutes until bacon is crispy, flipping halfway through.
  6. 6. Remove toothpicks and serve warm with ranch dressing and chives.

Notes

For extra crispiness, broil for 1-2 minutes at the end. Use kitchen shears to easily cut bacon slices in half for smaller rings.
