For the Crust:
- For the onion rings:
- 1 large sweet onion (sliced into 1/2-inch rings)
- 1 tbsp olive oil
- 1/2 tsp smoked paprika
- 1/4 tsp garlic powder
- For the wrapping:
- 12 slices thin-cut bacon
- 1/4 cup sugar-free barbecue sauce (for glaze)
- For serving:
- 1/4 cup ranch dressing (sugar-free)
- 1 tbsp chopped fresh chives
Instructions
1. Prepare the Crust:
- 1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- 2. Separate onion slices into rings and toss with olive oil, smoked paprika, and garlic powder.
- 3. Wrap each onion ring with 1 slice of bacon, overlapping slightly. Secure with toothpicks if needed.
- 4. Arrange on baking sheet and brush lightly with sugar-free barbecue sauce.
- 5. Bake for 20-25 minutes until bacon is crispy, flipping halfway through.
- 6. Remove toothpicks and serve warm with ranch dressing and chives.
Notes
For extra crispiness, broil for 1-2 minutes at the end. Use kitchen shears to easily cut bacon slices in half for smaller rings.
