Description

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 can (20 oz) crushed pineapple with juice
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, combine flour, sugar, baking soda, and salt.
  3. Add crushed pineapple (with juice), eggs, oil, and vanilla extract to the dry ingredients and mix until well combined.
  4. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  5. Allow the cake to cool completely before frosting, if desired.

Notes

For extra juiciness, ensure the pineapple is not drained. Store in an airtight container for up to 3 days.
