  • Candy thermometer
  • Baking sheet
  • Parchment paper or silicone baking mat
  • Heavy saucepan
  • Wooden spoon

Ingredients

  • 1 cup granulated sugar
  • 1/2 cup corn syrup
  • 1/4 cup water
  • 1 tablespoon unsalted butter
  • 1 cup roasted peanuts
  • 1-2 jalapeños, finely chopped
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

Directions

  1. Prepare a baking sheet with parchment paper or a silicone mat. Set aside.
  2. In a heavy saucepan, combine sugar, corn syrup, and water. Stir over medium heat until sugar dissolves.
  3. Add butter and bring to a boil without stirring until the mixture reaches 300°F using a candy thermometer.
  4. Quickly stir in peanuts and jalapeños until evenly coated.
  5. Remove from heat and add baking soda and salt, stirring briskly until foamy.
  6. Pour immediately onto the prepared baking sheet, spreading thinly and evenly using a greased spatula.
