Spooky and fun cupcakes decorated to look like jack-o-lanterns, perfect for Halloween parties.

- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 2 teaspoons baking powder
- Orange food coloring
- Chocolate chips for eyes
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- In another bowl, whisk together the flour and baking powder.
- Gradually add the dry ingredients to the wet mixture, alternating with milk, and mix until just combined.
- Stir in the orange food coloring until the batter is evenly colored.
- Spoon the batter into the cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cupcakes to cool completely, then decorate with frosting to make jack-o-lantern faces using chocolate chips for eyes and mouth.
Notes
For a spookier effect, use black icing for the outlines. Store in an airtight container for up to 3 days.
