These traditional Italian Christmas cookies, also known as Pignoli cookies, are chewy almond-based treats topped with pine nuts. They make a perfect holiday dessert.

- 8 ounces almond paste
- 1/2 cup granulated sugar
- 2 large egg whites
- 1 tablespoon all-purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon almond extract
- 1 cup pine nuts
Instructions
- Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper.
- In a food processor, pulse the almond paste and sugar until well combined.
- Add egg whites, flour, salt, and almond extract. Process until a smooth dough forms.
- Scoop tablespoon-sized balls of dough and roll them in pine nuts to coat.
- Place on the prepared baking sheet and bake for 15-20 minutes, until lightly golden.
- Cool on a wire rack before serving.
Notes
These cookies can be stored in an airtight container for up to a week. For best results, use high-quality almond paste.
