For the Rice:

  • 1 1/2 cups long-grain white rice (uncooked)
  • 2 cups chicken broth
  • 1 cup whole milk (or heavy cream for extra richness)
  • 1/2 cup sour cream
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp Italian seasoning
  • 1 cup shredded cheddar cheese (optional for extra creaminess)

For the Creamy Smothered Sauce:

  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1/2 tsp red pepper flakes (optional for a little heat)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp chopped fresh parsley (for garnish)

Instructions

1. Sear the Chicken:

  1. Season chicken with salt, black pepper, garlic powder, smoked paprika, and onion powder.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear chicken for 3-4 minutes per side, until golden brown (it will finish cooking later). Remove and set aside.

2. Cook the Rice:

  1. In the same skillet, add butter and diced onions, cooking for 2 minutes until soft.
  2. Add garlic and red pepper flakes and cook for 30 seconds until fragrant.
  3. Stir in rice, chicken broth, milk, salt, black pepper, and Italian seasoning.
  4. Bring to a simmer, then return the seared chicken to the skillet. Cover and let cook on low heat for 18-20 minutes, until the rice is tender and chicken is cooked through (165°F internal temp).

3. Make it Creamy:

  1. Stir in sour cream, heavy cream, Parmesan cheese, and cheddar cheese (if using).
  2. Let simmer for 2-3 minutes, stirring gently until the sauce thickens and everything is creamy.
